Today We Became Cheesemakers

After exploring Pompeii, we stopped off at the oldest mozzarella factory in Sorrento where the family owners still use their grandmother’s recipes. Uncle Guido, a cheese maker for 50 years, demonstrated the proper ingredients, steps and conditions necessary to make the best cheese. He also showed us how to braid, ball, and style it. Then Ms. Deady and a few other students got to try their hand at it. Afterward, we all enjoyed a cheese sampling. Mange! Mange!

The afternoon ended with a beautiful sunset over the Mediterranean.
